You can make sure everything is set to default by opening BIOS and, with my MSI BIOS, pressing F5. This restores Optimised Defaults - basically a reset to stock button. Some motherboards have a factory hard-reset option as well, stripping absolutely everything back to factory default.
And welcome to the builder's club.
My first PC game I'm playing is Hitman and I really love it!
You can absolutely run Non-K chips in those motherboards. Like I said, the chip itself is locked - the motherboard physically couldn't overclock it even if you ordered it to.
As for games, PC has a few absolute gems to offer.
For starters, PC has a big "Indie" gaming industry - these are small teams of people who make games because they love it. Often these games are very cheap and often very innovative. It's a minefield, for every one good Indie game you've find fourty-nine iredeemably terrible ones.
I would start with Life is Strange as your introduction to Indie. Not only is it a superb game, but it's also free. It's nothing like what you have on console, it's basically an interactive book/tv show with a really great story.
