They do... People do them all the time. Go to NVIDIA Control Panel and do Custom Resolution.
FYI all the higher refresh rate monitor are more or less working on the same principles. That's why you have 165 Hz monitor now, previously people OC their 144Hz monitor to 165Hz before manufacturers deem it safe enough to raise the refresh rate. There exist a whole Korean blackmarket using same panels as big brand for cheaper and more Overclockability (they do not restrict the clock rate like most of your brandname consumer grade).

I can oc my 4k monitor @ 1080p to 75hz but any more than that and it goes from 8bit to 6bit color. If your monitor supports the custom resolution in game then you're golden, there is a noticeable difference between 60hz and higher refresh rates.
