Once update has complete, verify the game cache in Steam.
Then reinject it into RAMDisk once again.
Update the game and then re-inject it; very simple.
Whats inside RAMDisk is not real; it is read-only.
If you DL is fast and free easiest is to just delete the old files, and get them redownloaded.
If not, then I'd keep the game install on HDD and use a mirror of it on the ramdisk:
- install on HDD
- find the game directory (library_root\steamapps\common\<game>)
- copy that to ramdisk
- rename the original folder
- create a link with the original name that points to the ramdisk folder
when update is due, you can just repoint the link to the original
