Prime95
Is any version ok to run to test my temperatures of my processor and overclocking ability with the i7 7700k ?

Just use the latest one.
Thanks the reason I ask is because they say not to use Prime95 if you just use your PC to do normal tasks and game here.

Prime95 is pretty much like a "worst case scenario" level of load on your CPU.

No matter how you use your system, if you don't expeience issues while running Prime95, you won't experience issues anywhere else. I personally think that you want to stress your CPU as much as possible, to eliminate any risks in case something does utilize your CPU fully(I mean, I mostly use my PC for games and internet browsing, but I do things that are very CPU-intensive sometimes).

I think it's fine to use, no matter what your intended usage is.
Use v26.6 not the latest one.

Or you can use Realbench. I find the max temp on both test the same. Actually they line up with Handbrake as well, so you try 2h encoding with Handbrake.

As a rule I let p95 pass the first 2 hurdles and after that you're golden. Almost no task will push your cpu that hard for more than 20 minutes at a time, games get a break during load screens etc. and if you've got good cooling you'll probably never reach critical temps.

If p95 fails a worker or freezes before the first 2 hurdles downclock or overvolt and test again, any freezing that occurs is usually temperature related which could be your mobo (vrm's maybe) or the cpu. Monitor temps with realtemp (cpu) or hwmonitor (all system temps).
For maximum temperature purposes, run the Intel Burn Test. For stability, run Prime95 version 28.10 for Windows.
It is NOT recommended to test Skylake and Kaby Lake with any version newer than 26.6
