But... could just go with a Pentium G4560 + B250 board + 8GB DDR4 and be way better off.

There really isn't much you can do to gain performance, except ditch FM2 and get on a better platform; like Intel LGA-1151 or AMD AM4
Just buy it online, there is like 1000 boards to choose from.
But that's just my opinion.
Especially brand+model of Power Supply
GPU - GeForce GTX 1050 OC 2GB
CPU - AMD A6-7470K Radeon R5, 6 compute cores 2C+4G
CPU Speed - 4.2 GHz
RAM - 8Gb
OS - Windows 10 64-bit
362.5Gb Free space and AMD High Definition Audio
I will post the rest later today
They also currently have a bundle at Fry's Electronic store for $169.00 ($181.82 after tax) that comes with an Intel Core i3-7300 Processor and a Gigabyte H270M-DS3H Motherboard
If you really want a step up above the Pentium class; go towards an i5 + Z270 board + 2x8GB DDR4-2400
A $60 7th Gen Pentium like G4560 would run circles around basically everything AMD ever made for FM2/AM3.
What about MicroCenter? Do you have one within an hour of you? They are usually way better with getting decent Motherboard + CPU bundle compared to basically any other local store in USA.
Gigabyte H270M-DS3H Board
That's a current bundle currently on sale for $169.00. Something I am willing to go for, all I truly want is to run Siege on atleast high at 60fps, think it'll work?
That's 16x9 ^ not 1080p with the GTX1050, and the G4560 is equal to i3 6100.
SIEGE is not a demanding game even fully maxed out visuals.
My old GTX 570 and FX-6300 ran the game just fine on Ultra at 1080p and those specs are terrible. A newer gen Pentium even + GTX 1050 or 1050 Ti would do the same or better in this game.
There is ZERO reason to buy any 6th Gen or 7th Gen i3; I would look at either G4560 or bump up to around i5 7400 or 7500.
If you have a more demanding game in mind, like Witcher3, GTA5, PUBG
Go towards an i5
