Turn off the big picture mode on controllers
Its really annoying.

you can turn it off in the steam settings

No you cant you can only exit but it stay active so when you press the xbox logo button it enters big picture mode

It only enters big picture mode when you press it while the main Steam window is active.

Do you fat-finger the xbox button? How?

Go to Settings -> Controller -> Test Device Inputs -> Begin Test -> Setup Device Inputs, and then when it asks you to setup the Xbox home button just skip it.

It should stop opening Big Picture mode via the Xbox button.
