Which version of Proton is best to use on most games?
Experimental sounds as though it might not be very stable. Should I be using the next one down? In this case 9.

Use whatever it defaults to, unless it doesn't work then check ProtonDB and see what other people are using.
Proton db is all over the place with Attila for example. some say 7.06. others, 8.06, Others say experimental.

ProtonGE also fix Full motion video playback in certain games.
