If you believe your CPU/RAM would struggle with 10/11, it's probably overwhelmed running 7 or 8 as-is. Also if you're running 8GB of RAM and using "9%" of your RAM, you're likely forgetting the OS actually consumes a fairly large amount of the installed low total RAM because all OS's need resources to run. Additionally, with 7/8/10/11 you can disable startup items, open less apps etc and even stick to running virtual memory though you may have issues if you have low RAM & low disk space remaining, compared to running a proper amount of RAM for modern day gaming.
You can also disable telemetry with a single on/off slider, disable updates, and firewall specific sites/services if you're worried though as stated the last time; if you use fb/reddit/twitter/amazon or other sites, they're collecting far more about you than you believe windows is yet people still freely utilize those despite their scripts running in so many sites for data collection, which you can also prevent from operating with a firewall or adblocker.
If you're worried about "spyware" or having data collection the best way to avoid such is either avoid the internet entirely, or learn to surf it with better browsers, plugins, and avoiding high data collecting places, etc.
At the most all I had to do with 10 was block a few domains, and then add the update app to the firewall, though I'm on the latest of Win10 as well since some games need 22H2 in order to function properly. Kind of like how the Steam Client will eventually need a new version in order to run properly on peoples systems which will require 10 and higher.
Thread OP also doesn't really consider that mac really isn't overall supported due to the owning company making it difficult to support gaming with the OS. However, Proton being extremely friendly and a free alternative if people will want to play their Windows games, let alone Linux compatible games. Allows people to still game without paying money for an OS, so it seems quite silly for someone to suggest dropping Linux.

Besides that, both MacOS and Linux are modern operating systems that are receiving security updates. Windows 7 hasn't gotten a security update since January of 2020.
This year, in part thanks to Steam Deck but also thanks to MacOS completely dropping 32 bit support from their OS and using custom silicon that you have to program things specifically for (With a really annoying development pipeline.) Linux has passed MacOS.
So as far as Steam goes, Windows 10/11 is top dog. Linux is second place. MacOS is just behind that taking 3rd, and Windows 7/8 is a distant memory that will be vanishing entirely in... (*counts on fingers*) 24 days now.
