"But so many people buy them at launch anyway!"
Yeah, and most of them enjoy their purchases. Not everyone has the same values, tastes and preferences when it comes to enjoying video games.
But if the critics and player base see it as a "low quality product", then it likely will end up selling a lot less than it would have if people actually liked it. Gamers who perch on their towers, ranting about the decline of the industry, are a very vocal minority. Most people just enjoy playing the games they buy, and there's nothing wrong with that.
As long as you make a minimal effort to inform yourself before buying a game, you can spare yourself the disappointment that comes with it not meeting your personal standards. It's not for us to worry about what other people buy and enjoy.
And the thing is if you understand the pressures and market forces you kinda understand why this sort of thing tends to happen more with AAA's than say A's, B's or Indies. AAA's are more time constrained than any other. Their release schedules are typically set in stone. Because shipping, to retailers, etc etc. They can't delay a week or a month beyond projections because the retailors that have already made their orders can't afford to sit on unmoveable inventory for that long.
Then there's the timing of marketing and working around the release schedules of your competitors.
Indies are more free to be careless about such things. After all. They aren't aiming for millions of units sold to break even. Nor are they under pressure to get the revenue in before the Q3 earnings report.
