Zomboid mods are updated fairly regularly.
If you want the workshop mods not to update, ask the person making the mod to make individual versions listed in the workshop. There's also moddb and nexusmods that may have the versions listed.
Valve doesn't force developers or modders to list all versions of something.
I have no issues with Bethesda games and mods if I wait patiently. Backing up saves periodically if you know this is an issue, can also be done if you like to use too many mods.
Since Bethesda games usually have multiple auto saves - you could backup using that as it'd still be present and undamaged.
Not a hard thing to do.
Moddb, nexus mods, or message the mod maker though there is zero guarantee they backed up an older version.
In this situation I'd say be glad mod makers sometimes provide a heads up they updated their content, otherwise its not a problem and nothing needs to be addressed, because like games, mod makers and decide if they want to provide legecy verisons of their mod or not, if not then oh well.

What part of "you can't even know which mod updated or not because the workshop doesn't show you" you didn't understand, you knuckle dragging inbred mongrel? Your whole point about Stellaris mods doesn't apply since THEY GIVE YOU A WARNING, YOU BRAINLET, YOU DON'T GET THESE WITH ZOMBOID. It's not a modding issue, it's a VALVE issue that don't let users have control OVER THEIR OWN SAVE FILES. It simply shouldn't update mods unless WE CLICK TO UPDATE THEM, simple as.

Second, Steam does clearly tell you which mods updated recently, go to Content in your profile, go to literally your subscribe section and switch it to filter by "update date" and bam, you know the mod.
Note: How is it a Valve issue, your playing with mods, already your entire idea of Valve having a part is null and void because any fool to thinking they have the right to get mad at the game developers when a mod breaks the game are already outright the dumbest people I hear whining.
Your warned that mods break a game, a "use at your own risk", in this case, why would valve be at fault for already something you downloaded that is "use as your own risk"?
Seriously mate, the fact that you not only can check which mods updated which I do rather normally due to me having 103 for Stellaris and using the built-in Steam update content area makes it easier for me, the fact you think Valve is at fault for literally mods is also rather bluntly ignorate when you already should know that mods are use at your own risk.
Also please learn to read, the fact your screaming your mind to the hills yet were unable to see that I said "The mod developer of ACOT gives a warning' while "others dont" should be a rather clear sign that I made it clear that some mod makers give indeed a warning, I never said Stellaris does but provided you want to scream like an angry mule then read stuff over, I cant expect much less, I dealt with someone yesterday who got mad and read between the lines then there as well.
