I know DOOM Eternal does use SCRGB, not sure about FFXV.
Assuming you don't stream and are just concerned:
To temporarily fix this issue (assuming you're using windows), open start menu and type 'windows hd color settings'. Then go to display settings 'use hdr' -> 'on' and 'stream hdr video' -> 'off'. Steam overlay is tethered to that setting but not utilizing it appropriately. As such, disable for now, or perhaps forever--it's just a menu screen after all.
Assuming you stream and insist on having it:
Don't use the overlay unfortunately until they 'fix it later'
Consider further that if you want to stream in HDR you need a streaming service that is capable of utilizing it (and wont down sample it). so if you're just streaming to your discord buddies/randos or something equivalent. they likely wont notice the difference or even know you were using hdr as they only see lower resolution and washed out display anyway--they'll see that crap, and you sit there thinking your display looks awesome while patting yourself on the back :) As such, turn off stream hdr video if you don't fall under the streamer category that has those capabilities.

Not only do so few people have HDR monitors, I'd be willing to bet that they don't have any at Valve headquarters... someone send them an LG OLED

HDR is there since 2014.
The only thing they do is to ensure compatibility with new OS versions...
