Make a selection box in properties for default launch option.
Everyone will understand, You click the launch button and then steam pops up the menu with 12 options of different types of "settings" to apply. Like game editor, VR mode, launch with DirectX, Launch with Vulcan... Except you went to make a coffee while the game launched. So you get back and nothing has launched.

Or in my case... I click the launch option and the game has a VR mode... I do not own any VR hardware, so I get an annoying option to launch in VR... I tried several ways to give a command of -noVR etc but its not an option that is accepted by steam.

My suggestion is to add a "select default option" tickbox to the prompt and then a tickbox in properties to "ask on next launch" Just in case your game has an editor mode you might want to launch.
This would mean you don't have to choose every time and just in case you do need to pick a new option you can.

Try "-nohmd" in the launch parameters/startup line.

Probably want to ask the specific game forum about it, because this isn't a steam client thing. Games have their own launchers because publishers want it that way.

Here is an example of what happens for me. When launching "phasmophobia"

I do not have VR hardware. But steam is asking me two options. I have tried both options but the games own launch system handles not having VR hardware and just launches as non-VR even if you choose steam VR mode. So in this case the option is useless and just an annoying step for me.
NB : many games launch like this in steam and its like having a login prompt for every time you click play.

please note that steam added a remember my credentials for login so you don't have to type your passwords in every time. So why not have a option to remember your default choice here.
It only takes a "default_launch = 2" setting adding to the steam launch file and a little code to choose option 2.
(this option used to be under the properties in steam before but they moved it to "on every launch".)

not sure if this will work for you but try adding this in the launch options:
-vrmode none

I tried this, no effect. I have looked for a switch or option before I posted the suggestion. (I re-tried this just to be sure just now as well.)

I would like to help more but finding a game i own, that has different launch types, and are small in install size. just seems a bit too much work.
I do agree it would be nice to have an option in the settings for each app, where you can set a prefered launch type. you can pick and chose dlcs to install so this might as well also be added.
