I have all of my Resident Evil games listed under multiple collections.
One is the default, "Favorites" collection.
One collection is just called, "R" for all titles starting with the letter R.
Another called, "Resident Evil". For everything related to RE.

Don't know how you would make them appear in chronological order though.
Like that thread mentions, GOG Galaxy has a feature that allows you to have a "sorting title" field by which launcher will sort your games. It defaults to the game's default name minus leading articles (like The), but you can change it to whatever you want.
Steam should definitely add this feature.
Yes, you can kinda do these things via workarounds, such as by making collections each containing one game but with the names you want to give them. But that's clearly a kludge of a solution.
Edit: I checked just now and GOG Galaxy not only lets you change the sorting title but also lets you outright change the displayed title too. I didn't know it could do the latter.
Steam should definitely add both these features.
