Scammed out of Scribblenauts Unlimited
On Sunday, me and another steam user agreed to exchange my copy of Scribblenauts Unlimited for his copy of New Vegas. He said that he couldn't trade because he was on his mobile device, so we agreed that I'd gift him my game and he'd gift me New Vegas in return. After I gifted my game and saw that he had redeemed it, he told me that he had sent me the New Vegas gift, but I hadn't received anything. After asking him to send it again, multiple times, he finally said that he "gives up" and deleted me from his friends list. All I want is my copy of Scribblenauts back please. I have a screenshot of the chat log for proof.

Use the trading system to trade, and the gifting system to gift. Use the trading system and you won't get burned.
Use teh golden rule of trading

Unlesss EVERYTHING fits in a SINGLE trade window DO NOT DO THE TRADE

You voilated this on several fronts, and were 'scammed'

You can report them to Steam Support but you won't get your items back as nothing 'bad' happened from Steam's perspective.
It wouldn't let me trade. The trade button was greyed out, it said he was on a mobile device, which is why we agreed to gift instead.
Your best option to try and get your game back is by contacting Steam Support.
https://support.steampowered.com/
Contact support to report him but they won't be able to verify you did more than gift him a game. I doubt you will get your game back.
As others have said, assume it's a scam and do it through the proper channels all the time.
In the future, please follow Steam Trading Policy to avoid further issues. Special attention to:
What should I not trade for?

Do not trade for anything that cannot be added into the trade window within Steam. The most common examples of these scenarios are the following:

Trading items/gifts for money outside of the Steam Community market. You cannot add wallet credit or any form of money into the trade window. A common example of this is trading for items/gifts in return for money via PayPal.

Trading items/gifts for CD Keys. You cannot add a CD Key into the trade window. CD Keys that are offered can be for a different game, fake, used or region restricted. A common example of this trade is trading items/gifts in return for a promotional CD Key that is never given to you.

THIS----> Trading items/gifts for nothing in return in the first trade and expecting to get an item or gift in a later trade. There is no reason to not trade everything in one trade. You may add unlimited items/gifts to a single trade. A common example of this is adding your items/gifts in one trade. Then the other user states that they will trade you their share or the rest of the items/gifts in another trade, but never do.

Always follow Steam trading's Golden Rule:
IF IT DOESN'T FIT A SINGLE TRADING WINDOW, DO NOT TRADE

Then you do not do the trade in that scenario. ALWAYS insist on using Steam trading window for every trade. If they cannot because they are on mobile, arrange to make the trade later when they are at home, anyone who says they must "hurry and get this done" or otherwise try to rush you into it is very clearly trying to scam you. Do NOT trust anyone's word on Steam, always insist on using safe trading only.
