By opening the chat window, it'll get a bit of the log out visible for you.
Otherwise, unless you've manually stored chatlog, there's none available for you for someone you've removed.
My god, check the first page of comments. You can't.
"Proof" won't do anything. They don't return scammed items regardless of what you have in terms of logs or records. If you give your item to another player, regardless of what they say they will give you in return, it is their item.
All you can do is go to their profile, click "More" and click "Report Violation" and tell Steam they scammed you. You won't get your items back, but the player may recieve a trade ban.
All you need to do - contact with Steam support.
What does that make not writing down important information gained from one?
As far as the 'scammer' comment, there's nothing at all that says Valve doesn't keep records of our personal chat logs for their own uses, we just don't have access to them.
