1280x1024 ain't exactly common for res, most of the time it's 1280x720 or 1280x800 and higher. Although 1366 x 768 SHOULD be supported, pretty common PC monitor resolution....
It's probably because it's a console port, dunno. Is there a way to edit the configuration setting files of the game itself? Maybe you can manually force the resolution by editing the config(s) file(s). You might try googl'in this.
Pretty certain this will either get fixed by the devs or by some crafty modder in the future. Shouldn't have happened though.
As for my specs, they are as follows:
CPU: Intel i5 3.4 GHz
GPU: Nvidia GTX 650 Ti 1GB
RAM: 12 GB Corsair Vengeance
PSU: 600 Watt Corsair Builder series
Motherboard: MSI z77a-g41
Monitor: HP vp 17. max resolution is 1280 by 1024, but it can support 1280 by 720. It just streches it to fit

That's a pretty nice rig to be running games on @ 1280x1024... if i were you i'd get a new monitor fast, they are cheap as ♥♥♥♥ these days, i recently got myself a new widescreen 16: 10 1900x1200 monitor.
Still... the game should run on that monitor though.... although it seems like a waste running your games only at 1280x1024 with the potential of your rig :p
1: Hook your computer up to your RCA tv with one of these: http://www.amazon.com/gp/product/B001CJOLBW/ref=oh_details_o05_s00_i00?ie=UTF8&psc=1
2: Change your desktop resolution to at least 1600 x 900
3: This is the hard part, Squint your eyes really f***ing hard and run Brutal Legend. You should notice that it's now visible.
4: Press esc when you hear Jack Black start saying things. Then enter, then right at least 7 times. You should be at the options menu.
5: Go to video settings, and change the resolution from the unreasonably high 1600 x 900 @ 120Hz, to something normal peoples' monitors can support. Like 1366 x 768, or in my case, 1280 x 1024 @ 60hz.
6: Accept changes, and quit brutal legend.
7: Hook computer back to regular monitor, but change desktop res. back to normal. Run Brutal Legend, and lo and behold, no more signal out of range!
8: !!MOST IMPORTANT STEP!! Go back to the APPDATA folder for BL, and delete screen.dat, and immediately remove from recycle bin. It doesn't do jack s**t.
9: Enjoy Brutal Legend on PC
On a side note, It's a good thing I had that RCA adapter, or i'd still be pretty pissed.
And being honest, that screen.dat trick did absolutely nothing. I changed it to below my monitor's resolution, and set it to 60Hz, and not to be fullscreen, but it didn't do a damn thing. Also, until anyone finds a better fix, I'm self-proclaiming this the official fix
