This post is a few months old but I just wanted to contribute anyways because this is a question I had myself and had to figure out alone, and it seems whenever someone asks a question, people generally don't give direct answers, and instead complicate things by suggesting different ideas~ "Oh, you don't need to do that, just do this more complex thing which is un-related to your initial question"

But I am here to tell you, the secret to moving the Skyrim folder is in your Registry, I even uninstalled the game, re-installed to a new directory and it didn't recognize the game was installed, because the uninstaller leaves "Registry Residue"

Step1:
Move your Skyrim folder where you want it (i.e C:\Skyrim\)

Step 2:
Open up Regedit, but be careful, there's a lot of stuff in here you can change which will break your windows installation (not that we're dealing with anything like that but it's still good to have a warning I guess)

navigate to "HKEY_LOCAL_MACHINE" open up "SOFTWARE" look for "Wow6432Node" and open up "Bethesda Softworks" then "Skyrim" it will say Installed Path and Install Path. *Note: This is the location within my registry, I am running a x64 bit OS, the path may be different for you.

*NOTE: (if you can't find it this way, it's easier to just do a search in Regedit, CTRL+F and search for Bethesda or Bethesda Softworks)

this is the registry entry that says where Skyrim is installed, so you just move your game wherever you want, then alter these two entries to whatever folder you moved it to. So if you move it to C:\Skyrim\ then alter the registry entries to C:\Skyrim\ *IMPORTANT: Be sure to use the ending slash, don't do C:\Skyrim, do C:\Skyrim\ Or your mods will not work.

My C: drive is really slow and ancient (Standard IDE not SATA) I just use it for Windows booting, so this is how I moved the game to my Game/SATA drive.

I hope this helps someone out there :)
blessed be.

yeah, C:\Games\Skyrim\ or C:\Games\whateveryouwant\ just make sure the registry is updated with the same path and don't forget the ending slash \
