Can I disable the support for a specific controller and make Steam recognize only one of them?

If they're of different kind/API, easily. If they're of the same kind/API, what are you trying to achieve?

Double Dualsense. I want only one of them to work with Steam games.

Not possible. You're free to use only one of those though.

With Steam's help anyway. You can disable one of your gamepads in Windows.
