If they're other updates, either use what Jerry said or set the games to only update on launch. That has to be done individually by right clicking the game -> properties -> in the updates tab.
02:00 to 04:00 most dont play games then they are sleeping. ( adapt it, to your off-peek hours. )
ps.
you cant stop update then itsa online game or recent played, they are seen as highly frequent access files and user might want to keep them update. ( and it still dont mean you are in controll over then its update, this is same as under covid-19 this is just from other side, then steam have time or think its a good idea then they have server idle time. ) you are not in control over it.

dont DL while playing another thing, user forget here, as a choise.
game is build on game devs update, this will feel worse the more games you own, 1000 or 5000 games its still same thing even happend more with more content.

From what you've written here, I'm assuming you have a few games installed that are mainly MP but have a SP component that you enjoy playing. Unfortunately games like that have not been designed to separate the SP and MP files in such a way to avoid MP content updates. For that you'll want to direct your complaints toward the devs of that game and not Steam. It's the devs that designed the game and them who are pushing out the updates to your games. Steam is simply applying them at the devs request.
Game developers have the ability to host their game on Steam in such a way to allow for updates to be somewhat optional but it is up to them to make that effort. There are a handful that make it possible.
We all have a collection of games. Thats what Steam is for.
You cant play a game unless it's updated, so if you dont want to update it, that means you dont want to play it.
SO UNINSTALL IT.
