Try what Oaky Leaf has referred to do.
I tried deleting thumbnails in Steam\userdata ... remote ... screenshots\thumbnails, then restarted Steam, but missing images are still shown. I also tried to then take a new screenshot with the same game, then also restarted steam again but this didn't help either.
A workaround that i have found however is when you click to select all and delete them it will delete the missing ones as well from the UI.. that of course deletes all of the images for that game though.
* Nvm what I just said, it actually worked. If you still have the pictures in your recycle bin, just restore them and delete them from steam.
If you already emptied your recycle bin after deleting the pictures from your computer disk but still have the thumbnails of the deleted pictures, just copy/paste the thumbnails back in the screenshots folder and they will show up on steam again.
It’s a pain for me to delete them directly from steam because the interface is slow but ig I’ll have to do that for now.
Ooooooh, this is great! So basically, we trick Steam Screenshot Manager into believing that the thumbnails ARE the missing images, so we then delete them as per regular Steam procedure! I am ashamed of myself for not having thought this on my own, given the fact that I tried a lot of things to fix this behavior (which, by the way, is simply bad coding and/or bad testing from devs at Valve or whatever), things which of course did not work. Now, to be even dumber on my side, I deleted the thumbs as well, and emptied the bin, but I almost certainly can recover them via previous backups.

Instead of doing the 'Select All', you can also use 'Shift' to select a custom range of images and then deselect from there.
