From Steam's tester, try Reset Device Inputs and if that doesn't resolve it, try Setup Device Inputs.
If still nothing, check if inputs are being read at https://hardwaretester.com/gamepad
If nothing there, try the site again but with Steam not running.
This caused me to look into another potential issue and I think I get it now- The PS5 dual sense controllers don't charge at the same rate the battery drains plugged into the PC...

So I guess it's just dying faster than it can charge. I'll have to charge it externally before reconnecting I guess. Thanks for the responses, lads o/
I don't believe they use battery power while plugged in. I'm thinking only case where it uses battery and can deplete faster than power provided is if using a power-only USB cable but connecting by Bluetooth - never tested nor researched this though.
I also don't experience the same as the Reddit posters saying their controller doesn't charge while Steam is active. I have used DS4Windows to get a reading of the battery, played for some time via Steam (also had a custom colour set via Steam) and then taken another reading. I found the battery charge percent has only gone up, never down.
I can't remember if I used the USB 2.0 or 3.0 port, so will re-test at some point with 2.0
