Can you log into the account? If so, you can change it via Steam settings. If you can't log in because of Steam Guard sending codes to an unknown/lost email, you will have to contact Steam Support. You can contact them here. You will need to create a separate Steam Support account in order to submit a ticket.
Submit a ticket, then wait for a response (it may take up to two weeks, unfortunately).

If the email address on your account is no longer valid, please make sure you have provided adequate information and proof of ownership to ensure the speediest results: https://support.steampowered.com/kb_article.php?ref=2347-QDFN-4366"
That was likely an automated response sent when a ticket is generated. Check to see that your ticket is still open.
As this applies to you (you do not know the email address tied to your account) you should read that link and try to follow the instructions within.
