If you have it up and working already, I bet you can just upgrade without needing to do a full clean install. I'm curious to see if that's true.
Oh... In that case yeah. You'll need to reimage.
Yes. you need to completely reimage your device if you want to install Steam OS. all your emulator stuff can be backed up and imported once you reimage though.
People need to stop calling Bazite "steamos". If I said "when I say RedHat I am referring to SuSe" I would be literally crucified for that
You do not. You have a Linux distribution called Bazite that is focused on gaming which happens to have the Steam client installed, I'm assuming it is defaulting to Big Picture Mode.
If you want true SteamOS, you'll need to perform a clean install as it is its own self-contained Linux distribution. You are probably already on the most updated Steam client. But as said earlier, the Steam client is not SteamOS.

Scroll all the way down on that page and you will see sections for install to a ROG or a Legion.
I installed it over Windows following the instructions at https://help.steampowered.com/en/faqs/view/1B71-EDF2-EB6D-2BB3
I used YUMI multi-boot USB. I'm not sure if it matters, but I did decompress the image from a .bz2 file first.
