Putting movies for VLC onto SD card
So I read that steam deck needs the SD card to be ext4 format, but Mac OS doesn’t work with that. I’m wondering how I can get movies from my MacBook onto an SD card to play on steam deck.

Over the network. SteamOS supports network shares, MacOS supports network shares. I moved stuff between my desktop computer and my Deck this way.

Also the Deck will still read an SD card in other formats, so if you need to grab data off one, it will. It only needs ext4 format specifically for Steam game installations. You can also use USB drives. I bought one with USB-A on one side, and USB-C on the other for this purpose.

But yeah, network transfers, super easy and convenient.
I just use a USB stick to copy files to my Deck, as Haruspex said, the deck can still read FAT and NTFS formatted drives.

Dumb question but where are you plugging a usb into steam deck?

The top port is a USB port. You either have a flash drive with a native USB-C plug or you use a simple adaptor. You can also use a fully-blown dock, that does the trick as well.
