Some games use the 'old' method of steam cloud which is to sync things from "My Documents". These are WINDOWS PROFILE specific, meaning that the only way to thave different save files is to load up Steam on a different windows profile so yuou have separate MyDocuments folders
Some games use steam's new cloud system. This makes save files Steam accoutn specific. Meaning no matter where you are or who logs in, your saves are always separate
In your case the game uses the old method. As such the only way to have absolutely separate saves is to log out of one accoutn in Windows, and log into a different Windows account
1. Search online where the game saves are located.
2. Move the save file to different directory so that game doesn't load that
3. Then, start the game, which will create fresh new save. If the game still loads your fiance's game save file, it could mean that Steam Cloud is restoring the save when you start the game. Recently modified file will be loaded, whether that'd be the one in the directory or the Cloud. To stop load save file from Cloud, right click the game in your Steam library, and disable Cloud temporarily.
4. Play the game.
5. When you're done playing, move yours out to different directory, and revert your fiance's save file back in so that she can play her's when she does.

To get achievement canceled, either speak with Steam support or use achievement editing software.
