I tried a lot of diferent settings on the Steam client parameters section and no way...
If I record the same game using NVidia tools, the mic is recorded fine, no pops, no clics, no cancellations...
I really like Steam recording because it provides a very easy way to manage the recordings... Its a shame that the mic recording is not working properly...
I will continue trying to find a workaround or solution, If I find any news I will post here!!!

I solved the issue using Voicemeeter Banana,
With this software the mic is recorded as expected and can be adjusted precisely.
It is a bit complicated until you understand how the different audio sources and destinations are managed, but it works.

Open Steam > Settings > Broadcasting.
Under Microphone, make sure the Volume is set properly (not too high).
You can also try auto-adjusting microphone volume to help prevent clipping.
Check Windows 11 Sound Settings:
Right-click the Sound icon in your taskbar > Sound settings.
Under Input, select your microphone and click on Device properties.
Adjust the Volume slider for your mic to a lower level to prevent clipping.
Use Discord's Audio Settings:
In Discord, go to User Settings > Voice & Video.
Enable Noise Suppression, Echo Cancellation, and adjust the Input Sensitivity to control how much sound is picked up.
Separate Game & Mic Audio:
If you want the system audio recorded through Steam and the mic in Discord, consider using a tool like VoiceMeeter. It allows you to route game sound and mic audio to different channels, giving you more control over levels.
