Set PlayStation Controller Support to either 'Not Enabled' (or to 'Enabled in Games w/o Support' and control Steam Input via the per-game setting), then connect the controller, and then try the games.
Over BT the DualShock 4 (also DualSense) will be operating in one of two states. One state is as a basic controller and is compatible with DirectInput, the other state supports the full features of the controller (touchpad tracking, gyro, rumble, lightbar control etc).but isn't DInput compatible.
When PlayStation Controller Support is set to 'Enabled', Steam will switch the BT DS4 to it's full feature state. Some games also switch the controller to its full feature state.
Once in full feature state you want to power-cycle the controller to return it to the basic state.
Some people use e.g. DS4Windows to emulate a wired DS4. This would give a result close to using the adapter (won't have the wireless audio support the adapter provided).
I had the reWASD trial installed and it took care of the BT state factor for my DualSense - don't know how (don't think it was virtual PS output, maybe it created a virtual DInput device???), but it provided DInput support when the controller was in full feature state. DInput support remained even after the trial expired (in fact I only noticed it after it had expired...).
Didn't think to try if it did anything for games that were USB-only (it can, but mean with how I had things configured :D).
