Transfer files from Epic Games install location into Steams location
Load Steam and hope Steam sees them.
May need to Verify game files in Steam to identify and download anything that differs between platforms
Yeah. I don't know what the GTA V folder is named EG side but Steam side you want it named: Grand Theft Auto V
Then choose to install the game, choose correct install location/library if applicable, and Steam should verify the data, download the difference between the builds if any, etc

So your saves are separated depending on which store your launching the game from.
