Your games that are already linked to that EA account would stop working if you unlink that account and will not link to a new account.
EA help has told me that my steam account is not linked to any EA accounts.
And that's where it falls apart: Steam doesn't even know who's connected to it.
More likely, EA told you that your Steam account was already linked with another EA account. Youo can kind of get a hint about that when you go to EA and login with your Steam account there; unfortunately, you're not going to "get in" immediately -- it will be sending a verification code to the EMail address of the EA account in question. So, unless you complete that login successfully, you won't be able to unlink your Steam account from it.
If I try logging into EA with my Steam account, it has me in a constant loop of resetting my password, then needing to reset it again. It states "Your EA credential's have expired" because the EA account my Steam account USE to be linked to has been deleted for a few years.
