Are you use controller to play game, or only keyboard, and mouse?
There key combo on controller to take screenshots, don't remember if off by default, or what the default combo was, but it's an option to rebind for sure. I have it Home button + RB / R1.
Steam screenshots for keyboard can be set via Steam client settings, top left click on Steam > Settings > In-Game > and you see Screenshot shortcut key, you can change the keys in it, for me I leave it F12, because it's the most unlikely key to press for 99.9% of games I play, unless I wanna take a screenshot.
If you use any macro keys, double check your work.
You could try setting Steam's screenshot key back to F12 or some combination you won't use, I vaguely recall Steam gets twitchy if you leave it blank.
feel free to locate the folder and wipe them all. again we are not after you, this just odd you did not notice so many taken, maybe its game own config problem here.

i mean sure top ace and high-end pc , might not even notice such minor resource use to take a screenshorts even that will explan alot.
