Now I can launch Alan Wake 2 from steam.

I set my target to "C:\Program Files (x86)\Epic Games\Launcher\Portal\Binaries\Win64\EpicGamesLauncher.exe"
kept my Start in selection to the same as my game location (found in properties when I've launched the game through epic.)
example "C:\Program Files\Epic Games\ReturnToMoria\Moria\Binaries\Win64"
then added the url found for the desktop shortcut epic can make to the Launch options.

It worked for a while, but lately it's been instead opening a poorly styled screen in the Epic Launcher that says I don't have permission to open that title. It's so off-brand that the first time I opened it I wondered if it was some sort of malware popup.
I replaced that slug with simply `Fortnite` as Nyako illustrated above, and now my non-Steam game is working again.

With a fresh install, I'm still seeing "Application not owned" errors whether I use the slug or `Fortnite`. I'll have to investigate further.
