I want to add my brother and others to my friends list so we can more easily play games together but i also would like to hide a lot of my online degeneracy is there a way to hide my profile steam achievements, forum posts pretty much everything from people on my friends list

No, because even if you did, much stuff about you including post history is public.

The best you can do is set your profile to private.

As for forum posts they are considered public posts and cannot be hidden.

will forum posts be viewable in my profile? or would they have to find them by searching for them?

Go to any profile, click the downward triangle next to the ellipsis (three dots) and you get more options, among them "post history". Privacy state of said profile does not matter.
