STEAM's - Skyrim SE/AE ver 1.6.640 AND new 12Gb Bethesda update of 'Creations" - Sale

Where and HOW do I 'use' the poorly-explained new "Load Order option" to "NOT USE" the new 'Creations' added features, so I can CONTINUE playing my PURCHASED STEAM Skyrim game with over 1000 saved games. (there is in fact NO explanation HOW to pick that OPTION.)

I would like to continue playing Skyrim SE - since I had NO option to NOT INSTALL the updated SE/AE 1.6.1130 version with its added features and "creation's" add, done AUTOMATICALLY by STEAM's update/install program in STEAM, and with Mod Organizer 2's own FAILED process to protect MY GAME from Bethesda's and Steam's UPDATE on December 5, 2023, that has also messed up some MODS, SKSE plug-in, game play, MO 2, and MY PATIENCE for ANY and ALL gaming companies, SELLERS or supporters of everything stated above, AND the complete lack of and SHAMEFUL consumer RIPOFF's being shoved down a consumer's throat by more of the money-deserving businesses for the wonderful products they make available and sell to us?

Begging for someone's HELP to say "do this to PICK that option to load a prior save game in the SKSE MO 2 - load of updated Skyrim SE's ver 1.5.1130 game saves without the new Creation's added item - I still had Fishing/Survivor Mode - and other 'creation club' items in my SE/AE ver 1.6.640 version I paid for from STEAM - and so where are they now? or were they not impacted by the 'creations' change Bethesda made - since that's not explained either....
