Unlink my social club account
Please unlink my social club account in gta v because I forgot my social id

The linking is done on Rockstar's end.
But removing it will turn your game unplayable, as the game is permanently bound to that Rockstar ID and can not be linked to a new one.

So, contact Rockstar to get your Rockstar ID back if you want to play GTA V again.

A tip is/might be that if you ever linked your Rockstar Social Club account to an Xbox or PlayStation account (simply by say also having GTA on console) that you can log in with those credentials on the web and then view email and/or reset password in the settings.
