how do you see recent players in the new steam overlay

I don't. I couldn't care less about them.

Not sure what you mean, could it be the counter in how many players in a game, ?

Open overlay, first button to far left at bottom to open general menu, you see recent players there, can even click button see recent players.

If want you can open Steam client, click view then click recent players.

You can filter players by games, and date last played with.
