If you want games that have crafting but don't actually need to use it (so it's an option that you can ignore, although you'll still miss out) you'll find yourself deviating from games that are focused on survival. If that is an option for you, games like The Division are great since it has no zombies (yet?) and you hunt baddies and don't have to worry about thirst and hunger at all and have fab multiplayer (atm). Everything you need is stored in crates, bags, cupboards and fridges so you don't absolutely have to craft anything (although crafting will get your better gear faster). But those don't really feel like survival games and instead have survival and RPG traits to hook players so it might not be up your alley.

What, exactly, do think of as "survival"?
Edit: there are probably some games that are open-world explore type games, but typically they seem more exploration/atmosphere based, not survival/combat/item based, if that makes sense.
Most realistic survival game.
No worries. Everyone has different styles of gaming and tastes so no biggie.
Miasmata also came to mind since outside of some botany-medicine-type stuff, iirc, there's not much crafting but it has the player-chr. being poisoned/infected and you have to keep it under control. And thirst/dehydration is a major factor, as well as a very unique cartography system.
Massive and detailed Map, shooter (against drug lords based on real world problems)
its not set in the future or past, is not futuristic or survival crafting. its finding clues and at the end finally beat the boss of the region. 10/10

I always found it incredibly fun because you could be tracking and hunting something or looking for supplies, and suddenly find yourself as The hunted. It was a game that used scent trails, and pack of raptors can pick you up from a considerable distance.
But again I'm not sure if it's still on Steam.
Aside from that I can't really think of a lot of survival games that don't have crafting as the person at the very beginning said. Sorry.
