If I launch the game in offline mode, will the game crash for the other person using my account?

Account sharing is not allowed.
If you mean with Family Share, that has been a known workaround for both playing the same library for ages.
So yes, it will work. As long as you remain in offline mode you can play your games and they can play your games via Family Share at the same time.
