While i had give access to the contents of the drives to my user and group i had not given access to the drives themselves. This seems to have resolved this issue. Managed to install some games and transfer to my secondary drive with no issue.
For future users wrestling with this issue. If you are running GNOME, open your file systems and click "+ Other locations" on the left panel, all the drives should be present.
Right Click the relevant drive > Properties > Permissions
Make sure the both the "Owner" and "Group" have read and write permissions, the option should be "Create and delete files" from the dropdown. Then close the window. If you want to change permissions for all folders and files contained within the drive, same process as above but at the bottom of the "Set Customers Permissions" window select "Change Permissions for Enclosed Files..."
