if you are moving to a new region, you will need to switch your account to the new region by making a purchase using a payment method from that region.
the nice thing about the forums is you can ask questions here and there are people that know how things work that will provide you with answers.

I have one follow-up question; do you think it will affect my log in? And game play? Suddenly logging in with an EU IP address rather than my Canadian one?
If not, you should get a new one and change the registered email on your steam account before moving.
Do you have steam guard on your phone?
Make sure you can still use your phone in your new country. If you can't then it's probably best to change to steam guard via email before the move.
You can either
1) Do nothing. If you can maintain a Canadian payment method, you can continue ot use the Canadian store while in Europe
2) Change your store to Europe. If you are moving there longer term, then as long as you have a European payment method, you simply add that payment method to steam and your steam country will be changed to Europe
Its all pretty much self service. Its your choice what you want to do. If you can keep your CIBC/RBC/TD/NC/etc card you can keep using your Canadian store. If you want to use your new European payment method, you can add that and your store will change to the European store
Basically change your store to whatever payment method will be the easiest to maintain long term.
You won't lose any access to games and you can log into steam from pretty much anywhere in the world. I travel a lot and logging into steam in different countries is no different than when I'm back home.
