If they're unticked, then they're not being shared to, it simply means they're users who've accessed your computer in the past.
Should they display as account names instead of usernames,
Check the PersonaName and see if you recognize it.
If you want it removed, exit Steam, in the same folder as above,

I restarted steam.
Anways (After that) in loginusers.vdf I seen no other users, and I don't see the need to delete config.vdf

Also I have checked my steam guard.
Everything now "seems" fine. I haven't accepted anything on my side.
Also I don't really care to give their usernames, if thats what you mean by sensitive.
But I will say one of them is not set up officially yet and the other is a level 0.
What does this look like to you?
Could it be possible that these people are intentionally trying something devious?

Simply sharing the same PC can have them display there unticked. If signed on that device at the given time.
Sure, It was a community computer, I did not save my logins or anything like that because of that. The only thing I didn't realise is that by default settings, steam authorizes that computer.

I should say my only gripe is that steam should not have authorized anything like this, by default.

I agree that Family Share leaves a lot to be desired logistically.
ah...but the question is, did these people try to add my library to theirs, assuming I would just "accept" it, without questions...?

Since the computer was authorized, anyone else attempting to access the said game would have them see the Request Access -prompt.
You likely got the request to share to your e-mail via that.
Since the computer is now de-authorized, any of your installed games they don't own should now just say [Buy]
