How can I stop Steam from throwing me Visual Novels everytime I open the Store front?
Title says all. I really hate those kinds of games and every time there they are.

In short, you can't. You can mark each product as "Not Interested" on the store page, which should prevent it being showcased on the front page.

You can. Customize your que and exclude the tag "Visual novel".

How do you customize your queue by tag? I only see the option for things like pre-releases, early access, videos, virtual reality, etc.

You mean the discovery queue, my bad. I think the OP means the rotating games on the front page.
