It's not like a website that handles actual real money that the law can easily understand if they all run away with it. Because it is just fake virtual goods then you have way less protection from laws and all that for now.
Sure they may be trusted by lots of users but there is no official legal stuff about that. All valve cares about is if the items are in your inventory or not.
One day the US government will probably shut all these sites down and all the items they hold will be in limbo, all online gambling is illegal in the US and these sites never block US users or anything.

Sure you could use them and might get some new stuff, or you could fall into a gambling addiction and loose all your stuff. I would not keep my stuff on the sites for to long.
