Thank you. Installing steamlink was enough.
- start the game on the host device manually and then press "connect" on the client device
- use big picture mode
- install SteamLink app (it will provide some additional libraries, and RemotePlay will be fixed)
First 2 options did not work for me, personally, but for some people here they did the trick.
P.S. I cannot my mark my own comment as "reply", can someone repost it? :D
Tried the workarounds but still no joy :(
In addition, if running on a Linux OS, close Steam and run in terminal 'steam -pipeline' seems to be a workaround for me with a little hit to performance for some reason
We got a solution working with just three of us last night. This evening (30th Nov 2022) the full group of six plus GM is playing Star Wars RPG on TableTop Simulator.
There is a full explanation of how to get this working on another thread.
Basically both the Windows Host AND the Mac client need to load the latest version of Steam Link specifically for the respective operating systems.
(There are downloads for Android and Linux as well , but we have not tested those)
You then need to re-establish the paired connection across the internet between Mac and Windows PC using a privately shared authentication code generated by Steam Link on the Client and copied to Settings > Remote Play > Pair ...... on the host.

Note: Steam link will (apparently) automatically detect other Steam devices on the same LOCAL network. This originally made us believe that Steam Link was ONLY for local networks. Not so. As long as both client and host are logged in to the same Steam account the 4 digit authentication code will pair them across the internet.
Top marks for Valve in developing Steam Link. Zero marks for pushing out the upgrade without an effective publication of the method to get it working.
None of these actually fix the issue, though
Third option did the trick for me. RemotePlay is working even though I don't start SteamLink app. I, however, abandoned RemotePlay entirely, since I had discovered Moonlight - it's so much better.
SteamLink App doesn't appear to be available for MacOS, which is what was causing the whole issue to begin with. I'll look into Moonlight.
1. You will need to download Steam Link on to you host machine.
For a Windows host use:

Install Steam Link
2. Download the Steam Link App for you client machine.
For a Mac client use:-

Install Steam Link
(The Steam-link App is the same whether client or host , the Win PC does not have to be the host)
3.Make sure you are logged in to Steam with the same account on both client and host
4. On the CLIENT, start Steam Link(Find this in your installed applications NOT Steam. i.e. for Win10 use the Windows key/icon and scroll down for "Steam Link"
If attempting to connect across the internet, Steam Link will show that it can see no other Steam devices/controllers. Click on the cog(settings) top right hand corner
Click on the computer icon
Click on "Other computer"
You should see a 4 digit PIN and a set of instructions.
Make a note of this PIN
5. On you HOST machine find "Settings" within the Steam app"(For Steam on Windows 10, "Settings" should be in a drop down menu under "Steam" or "View" top left of screen)
Click on Remote Play
Click on "Pair Steam Link"
Enter the PIN you obtained from the client
You should now see the client paired in the box above "Pair Steam Link"
Click on OK
6. Now go back to the client and find your game in Library
Click Play.
The game should now start on the host and stream to the client
