As far as your phone number goes,
Contact your carrier and request a new SIM-card with the old number, or contact Steam Support to get your old number removed. Alternatively,
You could also try going here:
  1. https://help.steampowered.com/en/wizard/HelpWithLoginInfo
  2. Fill in your account name

  3. [Email an account recovery code to x]*
  4. Type in the code you got sent to your e-mail
  5. Fill in your proof of ownership on the said Help Desk -page (Picture link)[i.imgur.com]
  6. [Remove my phone number] (Picture link)[i.imgur.com]
  7. Confirm removal (Picture link)[i.imgur.com]
* = If you don't have that option, and you're instead prompted to the Steam Support -article, then I'd imagine you either
  • Don't have a recent enough purchase. If you still have access to your account, you may still fix that by buying something cheap, i.e. from here.
  • You're under [Recently Changed E-mail Address], in which case you have to wait out until it's been more than 5 days since you changed it.
