never seen this my self , unless win7 and picture viewer app took over the extension , and uninstall app could be set to not assciated to a app. ( and is it not that what you have here. )
never seen this in win10 most of the time it crawl back to previous app as default.
it do sounds like you try the right thing , but you did not scroll further down and read the rest/repair/´back to begining reset was possible.
thirdpart app use system default. and that why they ask you. they do what system tell them it can use.
same as 7-zip it can take over other arcive, this is same.
make a screenshort , use paint, past it in there , then save as ".jpg" thats what i did i convert a .png file with paint as test to check system, its a long time ago i had seen issue with that.
use
DISM.exe /Online /Cleanup-image /Restorehealth
and
sfc /scannow
more a system check, what if other things has cause this, and no i dont know what that is.
