Refund of bundles
As an example, I bought "LEGO Harry Potter Collection". Do I have the option to refund only one game from this bundle? For example, if I have 10 hours in the first game, but I've never played the second one and want to refund only second one

No. Purchases are treated as a whole. If you buy several games in one purchase (even if not a bundle or a collection) you won't be able to refund only one of them

Not entirely true. If separate titles are bought in one transaction, you can refund singular titles to the wallet, just not the external payment method used to buy all the games.
I've done that myself in the past.

So, I can't play for a total of more than 2 hours among all the games included in the bundle?
Or, if the bundle includes 2 games, I can apply for a refund if in total, among all the bundle games, my playing time is less than 4 hours?

I've heard people lose, their steam accounts; after trying charge back... wouldn't do it ....

It's true. I checked it out. If you try to refund a game purchased in one transaction together with other games, you will not be able to change the refund method
