So Steam starts searching for the newest update for the game when you press PLAY.
You can also set a certain time when autoupdating is allowed.
But you cant completely disable the update function. If there is a new update for a game you want to play you are forced to download is before the game will start.
You can of course set Steam to Offline Mode before playing games.
Yes but beware. You need to run games at least ONCE before they will work in Offline mode.
So basically, install all the games you want to play, start each at least once and then go to Offline Mode.
Only then can you login directly into offline mode. Without saving the credentials Steam will force you to go online for login and that will trigger the automatic search for game updates.
