What is the difference between a mouse's DPI versus in-game sensitivity?
So I in the past have been told to leave the "pointer speed" in the Windows settings at default 5 middle. Although when it comes to gaming should I also leave the in-game sensitivity always default too and only change my mouse DPI?

Both needs to be calibrated to your liking. DPI (dots per inch) governs how precise you can move the pointer (extreme example, 1 DPI would be very inprecise no matter your sensitivity). Sensitivity/speed governs how quickly you move over the DPI. Like having 1 DPI, maxing the sens would have similar effects.

Some mice have a "sniper mode", which toggles to double DPI. While maintainig the same sens, the double DPI lets the user aim more accurately, the same amount of mousemovement moves the cursor/aim half the distance.

Personally, i have windows at default and in game at default with the mouse dpi at 6000. It means the pointer/aim moves very fast and smooth with very little hand motion, the speed takes a little getting used to but i like it because i have triple monitor setup to move across. Try them and see what your preference is and use it.

I normally just mess with my mouse DPI and leave everything else at default, I just wanted to hear what others do themselves.

There is no difference what parameter to tune. DPI means how mouse internal counter (integer) will change when you move mouse. More DPS - more counter value over the same distance.
Sensitivity means what value of this counter will cause cursor move to the next pixel.
If DPI is high enough you can change either of this paraneters and get exactly the same effect.
You can not position the mouse with an accuracy of micrometers in any case.
