How? I looked in controller options. Its on in all of my games. Turning it off really made the input lag go away. 😝
I’ll take another look, it was still on for in game properties - controller menu through the library.

So apart from something like that, if Steam Input is enabled by the devs then you have to disable it the way OP has described for the game.
For games that the devs haven't set it enabled, you can control it globally via Steam > Settings ('Preferences' on macOS) > Controller > General Controller Settings > deselect Configuration Support for the controller type being used. For this to be the controlling setting, the per-game override has to be disabled i.e. set to "Use default settings" (it's on that setting by default).
