Some games will let you reset the achievements if the dev has included that in the game.

But that usually only counts for the ingame achievments, not the one that register on your profile.
Once unlocked there is no way to relock them.

What you can do is use Family Share, create a new account and share the game with the new account, then play it on there. That new account can get all achievements again.

There was some indie game called Off-Peak I played a long time ago that allowed you to lock and unlock them again. Team Fortress 2 also has that option although that's never been a game I've reset.

You could use the third party program Steam Achievement Manager. In theory, this could get you into trouble for messing with the Steam database, but outside of the rare cases, where there you get ingame rewards for reaching an achievement, this is hardly followed up upon.
Still be aware, you're doing this at your own risk.

one option i use for some games like final fantasy is use steam achievement manager , just be careful with locking them if you go into a file that has certain flags set to "unlocked" as that will trigger multiple achievements at once

I know that at least Stanley Parable demo does this.

Example,

its been around for years and it has been said multiple times it wont cause bans , since all it does is simulate the same thing the game does when you fullfill what it takes to get an achievement , if you for example use a completed file from the internet for a hard achievement like treasure hunter in final fantasy 13 the game wont check if you got it legit on this system either , it sees the savefile has all "checkpoints" completed and awards the achievement , same with sam , except sam also lets you lock them again , i used it many times ( only for locking achievements ) and never had a problem
